Banana bread is as delicious as it smells, and this easy banana bread recipe will have your taste buds salivating while it’s still baking in the oven. It makes a great snack, breakfast, or a treat.

Recipe for Banana Bread

Yields: serves 6 to 8 persons
INGREDIENTS
- 3 ripe bananas mashed
- 1 stick unsalted butter, melted
- 2 eggs
- 1/3 cup of water
- 1 tsp salt
- 1 cup of sugar
- 1 tsp baking soda
- 1 tsp baking powder
- I pinch cinnamon
- 2 cups of whole wheat flour
- ½ cup almond and cashew nut slices
DIRECTIONS
Step 1
Preheat oven to 350 degrees F (175 degrees
C). Lightly grease a loaf pan
Step 2
In a large bowl
whisk dry ingredients wheat flour, baking soda, baking powder, salt, cinnamon, and
sugar. In a separate bowl, stir in eggs, mashed banana, melted butter,
water, until well blended. Stir banana mixture into flour mixture; stir just to
moisten. Pour batter into prepared loaf pan.
Step 3
Pour the batter into
a lightly greased (or lined with parchment paper)
loaf pan. Bake bread until golden and a knife comes out clean when inserted
into the bread, 50 to 60 minutes. Let cool for 5 minutes in the pan then
transfer to a rack to finish cooling.
Quick Tips:
- Be sure to use very well-ripened spotted bananas; they offer the best flavor and sweetness. Avoid
black bananas because they’re usually starting to rot, and they
don’t have good taste.
- Don’t pack flour when measuring. Better yet use a kitchen scale if you have one.
- Only use real butter. No shortening, no margarine, no oil.
- Check dates on baking soda and baking powder. If they’re outdated, the loaf may not rise the same.
- Adjust salt if needed. Only have salted butter on hand? Reduce salt to 1/4 tsp, so it’s not overly salty.
- Once you are folding
in the flour, be careful not to over-mix, so you get a nice tall loaf. Just fold until there are no
longer streaks of flour.
- Careful not to over-bake for a supremely moist loaf.
