Vadai is a popular snack or breakfast dish which is usually served with coconut chutney and sambhar. It's a crispy deep-fried savory food made of lentils. They are made by soaking urad dal and grind to the batter. The process of making hotel-style vada at home is not complicated once you know the trick to get the perfect consistency of the dough. We loved it to the core.

Recipe for Medhu vada
Recipe type: Snack-Breakfast
Cuisine: South Indian
Yields: serves 6 to 8 persons
Ingredients:
- Whole urad dal (without skin) – 1 cup
- Green chilies -2
- Raw rice -1/2 tsp
- Fried gram- 1/2 tsp (pottu kadalai)
- chopped onions(optional)
- salt
- Oil for deep frying.
Method:
Soak urad dal with ½
tsp of raw rice and ½ fried gram for one hour.
Drain the water completely and grind it along with green chilies to a smooth and soft batter without adding water or sprinkling little water now and then. If needed, you can sprinkle very little water and grind. Take a small amount of dough, and when you drop it in water, it should float.
Now take
a bowl of water, wet your fingers and take a lemon sized vada batter, flatten
it with your thumb. Make a hole in the middle. And slip it into the hot oil very
gently.
Once the oil is hot enough, reduce the flame to medium and fry until it turns golden brown on both sides. Remove it from oil and place it on a
colander or paper towel to drain excess oil. serve medhu vadas with coconut chutney
Quick Tips:
Don't add salt while grinding.
Try to make vada, once the batter is ready; If you keep it for long; Vada will
absorb more oil.
You can also add whole pepper
to the vada batter
